APPLE BUTTER


Ingredients:

4 # apples, mixed varieties
1-2 c sugar
1 c apple cider
1 tsp lemon juice, optional (use zest if needed) pinch salt
1 tsp cinnamon, ½ tsp each cloves & allspice

Method:

Method: *Peel and core apples; rough cut into large pot. Add cider and cook over low heat until soft. Blend spice with sugar. Add to apples and cook until a spoonful holds its shape, and doesn’t flatten out.

*You don’t have to peel or core apples; in  fact apple cores & skin may add flavor and pectin so during first stage, simply cut up and cook until soft. Press through a food mill to remove core and peel and seed. Proceed with sugar and spices.
