Serve these with Baba Ghanoush, Cilantro pesto, and Balsamic tomatoes.
Ingredients:
4 oz. goat cheese
1 oz ricotta cheese
1 TBS salted butter
2-3 tsp dill
¼ to ½ tsp lemon zest
As needed sea salt and coriander
Method:
Cream goat cheese, ricotta and butter in a mixer with a paddle; add dill, zest, and seasonings.
Place approximately 2 ½ oz. filling in the center of each crepe; fold over and under each side to form blintz, square pillow shapes. Reserve on buttered pan or parchment lined pan for service.
