Meats in this category are the most used meats of many cuisines, especially in the Mediterranean. The popularity of both poultry and pork is largely due the taste, their economy, and the variety of ways to fix it. White meat chicken and turkey are often listed for proteins on calorie-restricted diets so there you have another value of this group. Of course fois grais is in this category but you’ll not find a recipe among our collection since we have consciously decided not to participate for our own reasons. But bacon will show up on our menus! Most often it is house cured and smoked, so we control the additives, i.e., none!
