3 TBS EVOO1 onion, minced
2 cloves garlic, paste
1 oz prosciutto, minced
1 lb brussel sprouts, shaved
To taste: coriander and sherry vinegar
Method:Pierce sprout root end with a fork. Shave sprouts on the slicer blade of a box grater or hand held Mandoline. Place EVOO in a medium sauté pan and heat; add onion and garlic; cook until aromatic; add meat and cook to crisp lightly; add sprouts and cook until tender; finish more EVOO, coriander and dash of sherry vinegar to taste.
